Everyone, no matter where you live in the world, is always looking for a simple, easy and fast approach to cooking good, healthy food. Let me tell ya! This green bean salad is the easiest it gets!
The flavours in this salad offer the palette much to explore with the zing of the lemon, the zip of the fresh Parmesan and a touch of herb all finished off with crisp green beans.
To make this meal you'll need a few simple ingredients;
-Fresh snipped green beans (about 3 cups)
-A mix of beans- I used a pre made bean mix that includes black eyed peas, great northern beans, pinto beans, red kidney beans, navy beans, turtle beans and chick peas. (about 1 1/2 cups)
-fresh grated Parmesan
-Greek salad dressing (any brand; I like Kraft) (enough to coat the beans)
-Salt and Pepper
Bring a pot of water to a boil on your stove top. When the water reaches a boil, drop your green beans in and blanch them for 4-6 minutes (until they turn bright green and are tender to the touch). Take your beans out (or drain them) and put them into a bath of ice water. Placing them into the ice water will stop the cooking process.
Once your green beans have cooled, put them into a mixing bowl. Add your bean mix, enough dressing to coat the beans and add about 3 tablespoons of Parmesan, a sprinkle of salt and pepper (I add to taste).
When you are plating your salad, finding it off with more grated Parmesan.
